Have you played any of the SMT games? I would highly recommend the first SMT on SFC, PS1, or Sega CD; The PS1 version has the best presentation, but I just don't know if any versions other than the SFC original have fan translations. I like the Sega CD version most, personally. I'd potentially recommend SMT III instead, but I'm unsure that it has first person dungeons (and I've yet to actually play it for myself). The first SMT does have a lot of grinding, and it's not an easy game, but I think the monster recruiting/mixing, could be similar enough to the grind in Pokemon that it might work for you. (Unless, of course, you were the type to just grab the first 3-4 pokemon that looked good, and stuck with them throughout the game--you savage.)
Also, as I mentioned earlier, the first Ganbare Goemon on the Famicom has a bunch of first person dungeon segments in it. It's a fairly cool game, although it's also pretty tough. Quite a bit different from the later Mystical Ninja games.
