I highly recommend the original xcom games the reboot is nice, but the game play isn't as deep or challenging as the older ones. Also if you get the reboot get Enemy Within all of the expansion content is mixed into the standard Xcom Enemy Unknown campaign which can make for a real drag if you play the two back to back thinking it's a sequel or separate campaign.

I recently downloaded all of the original games in a bundle but have yet to play them. I only had Enemy Unknown when I played the reboot first (I didn't even know Enemy Within was a thing), and while I've since downloaded Enemy Within (as usual, part of a bundle), it will probably be a long time until I replay it since, as you said, it's not actually a sequel or anything.
The originals are great because there is just so much that can go wrong and the maps are randomly generated. One of my favorite things that got dropped was bullet pathing. Literally every shot in the original game keeps traveling till it hits something so you really have to be careful with newbie squadies or else the send bullets flying every where. That being said it's hilarious the first time you shoot an alien off screen. However bullets follow the same rules when enemies are firing so you have to be careful when moving as a group and choosing your cover.

It's a great game and very unique too! If you want to play the original, I recommend you to play Xenonauts instead which is a remake. And if not, Noise swears Firaxis' remakes are very good and I wouldn't be afraid of trusting his taste
