You don't know much about the GPL, do you? You certainly can sell software that's been released under the GPL for a profit. If you make changes to the original GPLed source and then distribute it in any fashion, free or for charge, you must also publish or make available freely the modified source. There are other conditions, but none of them prohibit selling GPLed code.

It sounds like a really good idea to me, the only problem with it is the selling. What your making can be made by anyone with a bit of knowhow, a screwdriver, and a pocket full of cash. Sure the Linux OS sounds like a good idea and the upscaling of Saturn games sounds really nice, but to then sell it to people or companies for money runs you into a whole world of trouble that I know I wouldn't want to be dealing with at the age of 14! I've been thinking of doing this sort of thing myself with a micro motherboard and an old NES case, for that retro feeling
Really, it will be amazing when it's done, but I think you should keep it to yourself, or freely distrubute it and be the king among Saturn emulators.
