Can't believe I forgot to mention Actraiser! I love the soundtrack for that game. Yuzo strikes again. Also, I have to second Joe and Mac. Especially like that "Waterfall Cliffs" tune.
Thanks for all the recommendations! I've started to check out the various OSTs Racketeers have listed. Really enjoyed the Verytex soundtrack. I've heard some Sakimoto stuff from a few Genesis games but need to listen to the others I've missed.

One of my favorite OSTs is the Final Fantasy VIII soundtrack. I particularly love the Fithos Lusec Wecos Vinosec Orchestra album and the Piano Collections.
Wind Waker is also outstanding as far as Zelda is concerned.
I could listen to Donkey Kong Country, particularly the underwater theme for hours.
Animal Crossing (Gamecube)'s Rainy Day music I would play in my office often haha.
Finally, Shenmue is another of my favorites.
