The emulation for these systems is pretty good. Especially for a starter setup. Don't worry too much about the RetroPie documentation about things being too slow,as they haven't been updated in forever. RetroPie is an awesome piece of software, though, as it let's you picd from a large list of emulators to install, and installs + preconfigured a nice frontend for you.
I use this as the brains of my arcade cab, and it runs pretty darn well. The only thing you would worry about in that setup are games like starfox, that use chips that snes9x 1.39 doesn't really play well with. Other than that, probably every game for those systems will run fullspees (I play them frequently on mine).

Do you run CPS2 games in your cab? How do they (and other 90s games) run?

From what I've seen it can run it decently well, but I kind of like the idea of using a pi as a dedicated media/streaming hub. Or fashioning one into a pipboy.

When I bought mine, I'd envisioned making it into a really tiny arcade machine using a spare composite backup camera (leftover from my Nomad mod attempts) inspired mostly by vcoleiro1's awesome GBA mini arcade cab build. It's going to be so much fun! The only problem is I can't justify starting it before I bugfix and finalize my bartop arcade PC and build it's shell (not as much fun anymore).
