There is a Game Xchange not far from where I live and they have a decent UMD selection. The prices don't appear to be bad, though I am no PSP expert. There are also a lot of individual Amazon sellers who have loose UMDs at reasonable prices as well.

Thirded. I've got a 1000, and I'm really happy with it, but the 2000 or 3000 would probably be better if you can find one cheap (I went with the 1000 because I found one really cheap bundled with games on Craigslist).

$40 or $50, I would guess. Mine was $50 with a carrying case, memory stick, and five games.

Is it reasonable to pay more for a 2000 or 3000 than a 1000 or should they all be about the same?

A 2000 or 3000 should cost about the same amount. Both of them will cost slightly more than a 1000 (i.e., like $5-$10 more).
EDIT: Many second-hand stores do not differentiate between the models anymore, however.
DOUBLE EDIT: Also, collecting UMD-only is a good way to go. There are a lot of loose UMDs floating around, and it is hard to find CIB games.

I haven't seen a PSP sold in a physical store in three or four years, but yeah, online, you can expect to pay between $5 and $15 extra for a 2000 or 3000 and you would for a 1000, but as prfsnl mentioned, those two models are typically the same price. I don't even know what the difference between them is, but they're definitely a step up from the 1000. I love my 1000, but I wish that it had the composite output that the later models support. Composite may be a shit output, but it's better than no TV output at all.

That's a fantastic break-down. I'm really happy with my 1000, but I'd rather have a 3000, truth be told.
