It's probably why when I play you guys on here, I always fall to last and stay there no matter how many boosts i get and use(though I do fall off quite a bit for some odd reason which never happens in single player)

Coins do not affect your overall speed. What usually happens is, when people see they collected 10 coins, they do not go out of their way to collect coins, resulting in making tighter turns and not moving erratically around the course.
As for your problem, Darsparx, it is a simple matter of brain function. When playing a game on-line against other people for the first few times, your brain is firing on all cylinders and isn't streamlining the information. This increases your adrenaline and makes you more twitchy. You get nervous, anxious and you make a lot of mistakes because of this. Over time, you get used to the feeling, your brain starts to streamline the input and you make those connections much more quickly and perform much better.
It is simply being comfortable with the game controls, and being comfortable with the on-line experience, things you can only do with time.

They do increase your max speed, according to the manual.
Another general issue that's more or less inherent to Mario Kart is that your biggest threat is what items the people behind you are getting. In this, the farther you are from first, the better chance of getting the more powerful items. Usually, if the person in first can get a half decent lead, the rest of the racers wind up kicking the crap out of one another and falling even farther behind.
Actually catching up to someone who isn't making mistakes can take some pretty lucky items.
Also, obviously, if you're doing 50 or 100cc races and then coming online and doing 150cc, you're going to be flying all over the place.

I really need to explore short cuts - get them memorized. I haven't played much single player and I'll feel like i'm racing well and then i'll just see one of y'all go off board (or so it seems) only to pull way ahead of me. Thing is - i'm not wanting to play alone when I do have time; i'd rather go online.

Well at least in single player you have the ai, but they're still really easy in 100cc(though I still fall 2-4th most times it seems and really need to learn the shortcuts myself...probably my biggest issue and why I always hit last).

Doing time trial and watching the Staff Ghosts really helps you understand all the different shortcuts. They use different ones at each lap usually.
